The wine is dry and fresh with aromas of strawberry and cherry. It is a delightful seasonal drink suitable for any antipasti or grilled meat pairing.
85% Nebbiolo from the Hilltops and 15% Sangiovese from Heywood. Quick 3-hour press cycle, not held on skins or stems that would attribute tannins to the wine. The juice was 50% cool fermented in stainless steel, whilst the balance naturally fermented in seasoned barriques. The wine was held on full lees until bottling in May.
