Fresh pears golden and nashi, jasmine flowers, white peach and a wet grass, earthy aspect. The palate starts broad and soft then turns quite angular and grippy on the back palate. More tart apples and lemon on the palate to contrast with the pears, the acid is firm but not over the top giving a great long finish
Fruit sourced from the Hilltop’s sub region Prunevale. 70% whole bunch pressed, 30% being destemmed and left on skins for 24 hours. Vinified with neutral yeast and fermented partially in old oak, ceramic and amphora with a temperature range of 15 to 16 degrees Celsius
