Toasted almonds and hazelnuts, marzipan, sweet yellow peach, apricots, hints of brie and brioche, the nose of this wine shows the dichotomy of Chardonnay to tee, its sweet and savoury. The palate mellows out the savoury aspects on the front palate more showing its layers of stone fruits. It feels grippy and we get those nutty aspects right on the finish
Sourced from three of Tumbarumba's oldest vineyards; Johansen/Glenburny, Wondalma and Tooma. Grapes are handpicked and whole bunch pressed straight to 35% new French barriques and puncheons – balance to 1 to 4 year French barriques. Wild yeast fermented and left on lees to go through full malolactic fermentation. The wine is then kept on lees. Barrels are stirred and topped weekly.
